INGREDIENTS: Fish stew
1 Kg of fish (can be salty)
¾ pounds of onions
500 gr. tomatoes
400 gr. sweet pepper
1 head of garlic
1 cup oil.
A teaspoon of vinegar
A few black peppercorns
A pinch of ground pepper
2 bay leaves
Thyme to taste
If the fish is salty leave to soak the day before to loose some salt changing the water a couple of times.
we take the fish and cooked very little for not overcock it and then you drain the water.
In a skillet onion and sweet pepper adding the bay leaf, thyme and saffron, when add the tomato sauce is fried.
Meanwhile apart, in a mortar pestle the pepper, garlic, salt and ground pepper added with vinegar. This well mixed poured into the pan, leaving a few minutes over the fire.
After you add the fish, slowly giving a boil for a few minutes, and you're ready to eat.
